Responsibility and authority:
Key tasks and responsibilities
Manage and control the Catering Department to ensure safe and hygienic functioning of all catering and accommodation facilities;
Responsible for menu planning;
Responsible for healthy, high in quality and nutritious food preparation;
Responsible for provision receiving and handling. Ensure food quality is within standards;
Responsible for provision storage conditions monitoring. Control expiry dates of provision;
Responsible for laundry activities and housekeeping of accommodation, provision stores rooms, laundry and galley;
Conduct regular hygiene and housekeeping inspections of accommodation, provision stores rooms, galley and mess rooms;
Responsible that high hygienic standards are maintained;
Develop and revise procedures and standing instructions for the Catering Department;
Assist in preparation of budget and control expenditure;
Responsible for sufficient stock of provisions, laundry and cleaning consumables and linen;
Responsible for collection, processing and disposal of waste for the catering department;
Responsible for competency assessment and performance evaluation of subordinates;
Responsible for planning of all catering activities;
Liaise and co-operate with the OIM, medic and other departments on catering and hygiene issues;
Liaise with the on shore Catering Contractor;
Prepare and administer required reports;
Undertake training relevant to the position requirements;
Responsible for on-the-job-training (OJT) of subordinates. Ensure that training needs are identified and addressed;
Member of Emergency Response Team.

Qualification requirements:
Education
According to Training Matrix.
Experience:
Five years’ experience in catering, with two years of offshore experience.
Interpersonal skills
Good inter-personal and communications skills.
Good management and supervisory skills.
Knowledge
